FIELD: food industry.

SUBSTANCE: proposed method for producing chewing candy involves boiling sugar syrup, mixing it with pre-soaked water at a temperature of 45-48°C with beet pectin, citric acid and cocoa butter emulsion for 30-35 minutes. Then L-carnitine and dry guarana extract are added with vigorous stirring. Next, add starch and dissolve it with stirring for 16-22 minutes. Then the mass is cooled and shaped. Moreover, the components of the recipe mixture are taken in the following quantities from the total amount of raw materials, parts by weight: sugar syrup - 35.0-45.0; beet pectin 1.7-2.5; citric acid - 1.0-1.5; cocoa butter emulsion - 5.0-10.5; L-carnitine - 0.5-1.5; dry guarana extract - 0.5-0.8; starch 7.5-10.0.

EFFECT: invention makes it possible to increase the nutritional and biological value of chewing candies by adding L-carnitine and dry guarana extract.
