FIELD: biotechnology.

SUBSTANCE: disclosed is a method of producing a milk-clotting enzyme from fruit bodies of higher fungi Grifola frondosa, involving fruit bodies homogenisation and freezing. Obtained homogenate is thawed, precipitate is mixed with distilled water in ratio 1:5–1:25, ultrasonic extraction of aqueous suspension of fruit bodies is carried out with frequency of 28 kHz, power of 170 W, at temperature of 24–32 °C for 10–30 minutes, treated with 5% aqueous solution of bentonite for 20 minutes while stirring, centrifuged, obtained liquid is filtered with pore size of microfilter 0.45 mcm, filtrate is concentrated under vacuum by volume by 6 times at 28–40 °C and lyophilized at −27...−39 °C with a filler, table salt in concentration of 15–35%.

EFFECT: invention provides higher milk-clotting activity of the enzyme and the ratio of milk-clotting to total proteolytic activity.
