FIELD: food industry.

SUBSTANCE: invention relates to a method of producing beer, containing an extract of medicinal and drug-edible higher fungi. Method comprises preparation of mash, its saccharification, filtration, boiling wort with hop, clarification, cooling, fermentation and ripening beer, wherein at fermentation stage wort includes a mushroom extract of post-fermentation liquid, produced by submerged cultivation of pure cultures of medicinal and drug-edible mushrooms in liquid nutrient media, containing carbon and nitrogen sources, in aseptic aerobic conditions, wherein mushroom extract is produced from whole post-fermentation liquid, and is divided by sedimentation or filtration into a liquid phase – culture liquid and solid phase – mycelium biomass. Prepared mushroom beer contains mushroom extract of medicinal and drug-edible higher fungi in amounts equivalent to 0.5–5.0 g/l air-dry mycelium, and culture fluid – 5–20 % of volume of ready beer.

EFFECT: method enables to obtain a beverage with an aroma of a mushroom extract, physiologically functional properties and longer storage life.
