SUBSTANCE: invention relates to devices for non-through removal of parts from products, primarily from fruits such as apples, pears, as well as from other fruits and vegetables, and is used with a widespread special knife for the through removal of the core of fruits, which has a ring knife. The device for separating the cylindrical part removed from the product contains a handle with a longitudinal element made in the form of a strip with a cutting edge at the end, wherein the cutting edge is made with double-sided sharpening, and at least one protrusion, the surface of which rises above the side surface of the strip for interaction of the protrusion with the removed part of the product, wherein at least the surface of one of the protrusions is located on the side of the edge of the strip or extends onto this surface, and at least one of the protrusions is placed in such a way that its working surface interacting with the part of the product being removed is located in zone L equal to 18 mm and determining the distance from the extreme point of the end to the extreme point of the working surface of the protrusion.

EFFECT: increase of efficiency and stability of the separation and subsequent removal of any size of the fruit at any depth from any fruit of any density.
