FIELD: food industry. SUBSTANCE: method of shredding of vegetables provides for execution of preliminary vertical cuts simultaneously with vegetable advancement through a system of vertical and horizontal knives; prior to the beginning of subsequent shredding, vegetable is turned in such a manner that the planes of cuts turn out to be positioned at an angle to the plane of the vertical knives. Initial preliminary cuts cam be made by vegetable advancement through the vertical knives in the direction opposite to the direction of subsequent shredding. The shredding device has a bearing surface, vertical knives and horizontal knife, the height of each vertical knife exceeds the distance between the plane of the bearing surface and the plane of shredding of the horizontal knife at least by two times.
