FIELD: kitchen utensils.

SUBSTANCE: invention is related to methods and devices for non-through removal of parts from products, primarily from fruits such as apples, pears, as well as from other fruits and vegetables. The method of separating a non-through cylindrical part removed from a product is that a ring knife of a fruit core remover is inserted into the product to an incomplete depth, placed on a cylindrical holder with a handle, which has a sectional shape of part of a circular arc, while the cutting edge of the ring knife forms in the product there is a cylindrical slot, inside of which there is a cylindrical part of the product intended for removal, after which a longitudinal element of a device is inserted into the cylindrical part for separating a non-through cylindrical part to be removed from the product, containing a handle with a longitudinal element made in the form of a strip with a cutting edge at the end, then the core remover is rotated together with the strip, separating the cylindrical part from the rest of the product, after which the annular knife of the core remover with the removed cylindrical part and the strip located in it is removed from the product, and the maximum transverse dimension of the device handle is greater than the width of the strip. The cutting edge of the strip is made with double-sided sharpening, on the longitudinal edge of the strip from the end there is a bevel without sharpening, and the working part of the strip has the following parameters: width 7-13 mm, length 75-110 mm, thickness 0.7-3 mm, and said strip is made independent from the core remover and is inserted into the removed cylindrical part at an angle relative to the axis of the ring knife so that the cutting edge of the strip is directed to the inner surface of the ring knife between its cutting edge and the surface adjacent to the holder, while the strip located in a zone from minus 5 mm to plus 5 mm on both sides of the axis of the ring knife and at an angle from minus 5° up to plus 5° relative to an axis located in the plane of the strip perpendicular to the length of the strip.

EFFECT: increasing the efficiency and stability of the separation and subsequent removal of any large part of the fruit at any depth from any fruit of any density.
