FIELD: food industry.

SUBSTANCE: disclosed is a method for the production of dried jellyfish, in which fresh jellyfish Rhizostoma pulmo is washed, cleaned from viscera, the dome is separated from the mouth lobes, cut jellyfish is treated with an aqueous solution of natural tanning substances extracted from dried vegetal raw materials. Dried vegetal raw materials used are dried pomegranate peel, or dried oak bark, or dried leaves of European smoketree, or green leaf tea, for this purpose dried vegetal raw materials, ground to particle size of 2.5–3.0 mm, in amount of 0.75% of mass of cut jellyfish, sent for drying, is poured with drinking water at hydraulic modulus of 1:20 and tannins are extracted under standard atmospheric conditions at temperature of 100 °C for 30 minutes from the moment of boiling. Then the tannins extract after cooling to 30 °C and filtering through a sieve are introduced into a container with jellyfish, drinking water is topped up in an amount which ensures the ratio of jellyfish to the formed aqueous solution of tannins of 1:0.5. Further, the jellyfish and the aqueous solution of tannins are mixed and held at ambient temperature for 3 hours, after which the jellyfish is washed, the domes are cut into parts, jellyfish is laid out on a net stretched on frames installed on drying sites located in a well-ventilated place and equipped with a canopy. During drying, jellyfish is turned 3-4 times on a net; drying is carried out for 1–2 days at air temperature of 27±3 °C until reaching the weight fraction of water of 12–15%.

EFFECT: invention increases protein content from 0.6–0.8% in fresh jellyfish to 28–36% in dried jellyfish, which increases nutritional value of dried jellyfish as a source of raw materials for producing collagen, which is the main protein of jellyfish, hydrolysates and food products.
