SUBSTANCE: invention relates to food industry, namely to bakery confectionary and meat industry. Proposed hypoallergenic gluten-free mixture for bakery, confectionary and meat industry contains wheat germ flakes, sunflower kernels and apricot kernels, wt.%: wheat germ flakes – 25–75, sunflower kernels – 1–20, apricot kernels – 5–55.
EFFECT: invention is aimed at achieving hypoallergenicity, gluten-free and low fat content of the mixture for bakery, confectionary and meat industry in comparison with existing solutions.
