METHOD FOR PRODUCTION OF DRY MARE COLOSTRUM IN FORM OF POWDER AND IN ENCAPSULATED FORM Russian patent published in 2024 - IPC A23C9/16 

FIELD: food industry.

SUBSTANCE: disclosed is a method for production of dry mare colostrum in form of powder and in encapsulated form. Method involves placing colostrum for 2 hours after milking of mares without cleaning in stainless steel vats and mixing, cooling to temperature of 0+2 °C. Colostrum with total capacity of 2 l is poured in a thin layer on a separate tray at rate of 14 l of colostrum per 1 m² of tray surface. Trays with raw mare colostrum are placed in a freezer, then trays with frozen colostrum to temperature of -40 °C is removed from the low-temperature shock freezing cabinet and freeze drying of mare colostrum is carried out, the freeze-dried colostrum is milled to a fine fraction with size of 3–4 mcm, dry mare colostrum in form of powder is packed in three-layer (polypropylene, barrier film, foil) packages of 1 kg of dry mare colostrum, packages with colostrum are packed into transport containers – boxes from corrugated cardboard, dry mare colostrum in encapsulated form is packed in batches in solid gelatine capsules of standard size No. 0 by 300 mg of dry mare colostrum, at the end of the technological cycle, colostrum in the form of powder and in the encapsulated form is treated with gamma-radiation at the installation “РТУ-3000”.

EFFECT: method enables to preserve high nutritional and biological value of dry mare colostrum; improved quality of dry mare colostrum (size, shape, porosity of particles, solubility and density of colostrum), increased storage capacity of dry mare colostrum (up to 24 months).
