FIELD: biotechnology.
SUBSTANCE: group of inventions relates to methods of extracting proteins from milk raw materials. Described is a method of producing a fraction containing lactoferrin and/or lactoperoxidase proteins from a source selected from: milk, colostrum, sour or sweet whey, by means of a chromatographic separation process using a monolithic column having cation-exchange properties, in which in the separation process combined elution with a gradient of pH and salt is used after loading the source into a column, where the pH gradient starts in the range of pH from about 4.0 to about less than 8.0 and ends in the range from about 8 to less than 13. In addition, disclosed is a composition containing lactoferrin, where lactoferrin has an iron-binding capacity of more than 60% and an iron saturation level of more than 1%, as well as a composition containing lactoperoxidase, where lactoperoxidase purity is more than 70%.
EFFECT: invention enables to obtain lactoferrin and lactoperoxidase with high degree of purity.
