FIELD: food industry.
SUBSTANCE: invention relates to food industry, namely to a method for production of fish snacks from bone and cartilaginous wastes from cutting of pacific salmon. Method for production of fish snacks from bone and cartilage wastes from cutting of pacific salmon includes preparation and grinding of bone and cartilage wastes from cutting of pacific salmon, adding food salt with low sodium content, agar solution in drinking water, drinking water for dough kneading and mixing until a plastic mass is obtained. Then one performs moulding a layer of snack dough with thickness of 6–8 mm, cutting the layer of dough into strips, drying the snack dough strips at temperature of 30°C to residual moisture content not higher than 20%. Before grinding, bone and cartilage wastes from cutting of pacific salmon are dried at temperature of 110°C for 48 hours and crushed to powder. Initial components are taken in the following ratio: powder from bone and cartilage wastes from cutting of pacific salmon: 100.0 kg, dry agar: 0.5 kg, drinking water for preparing the agar solution: 10.0 dm3, food salt with low sodium content: 1.73 kg, drinking water for snack dough kneading: 60.8 dm3.
EFFECT: invention enables to obtain a product with high nutritive value, as well as to expand the range of products.
