FIELD: food industry.
SUBSTANCE: invention relates to production of dairy products, particularly stewed milk. Disclosed is a method for production of a dairy product. Method involves milk purification, cooling, pasteurisation, separation, normalization and homogenisation. After homogenisation, the product is dispensed into glass bottles, which are sent for longing in a long pasteurisation bath at temperature of 80°C to 85°C with holding for 5–6 hours, followed by cooling to a temperature not higher than 25°C.
EFFECT: method allows to improve taste of the product.
