FIELD: dairy industry.
SUBSTANCE: invention relates to the dairy industry. The method for obtaining a product from cream and fruits includes obtaining a semi-finished product from pear or apple fruits by grinding, homogenization, deodorization, disinfection of fruits in a mechano-acoustic apparatus with a rotary dispersing device in the presence of water with an impact intensity of 100-500 W/kg for 10-15 minutes at a temperature of 60-65°C to a dry matter content in the semi-finished product of at least 10%, mixing of the resulting semi-finished product in an amount of 5-15% of the mass of the mixture with cream with a mass fraction of fat of at least 45%, taken in an amount of 85-95% of the mass of the mixture, for 15-30 minutes at a temperature of 72-74°C in the same mechano-acoustic apparatus with simultaneous homogenization, yellowing stage, oxygen saturation of the air and sterilization of the mixture, hot filling, capping and cooling.
EFFECT: invention makes it possible to obtain a product with original organoleptic characteristics and a long shelf life.
