FIELD: food industry.
SUBSTANCE: invention relates to food industry and can be used in bakery industry, in particular for nutrition of people suffering from various types of gluten intolerance. Moulded gluten-free bread contains water, a semi-finished product of rice starter, maize starch, apple juice, refined deodorised vegetable oil, pressed yeast, food salt, white sugar, psyllium, pumpkin, flax, sunflower and sesame seeds, as well as a composite mixture. Composite mixture consists of a mixture of rice and linseed flour at ratio of 70:30, or a mixture of maize and linseed flour at ratio of 50:50, or a mixture of maize and pumpkin flour at ratio of 50:50. Initial components are in the following ratio, g: water – 469, semi-finished product of rice starter – 312, maize starch – 297, apple juice – 234, composite mixture – 156, refined deodorised vegetable oil – 47, yeast – 35, food salt – 16, white sugar – 16, psyllium – 16, pumpkin seeds – 10, flax seeds – 10, sunflower seeds – 10, sesame seeds – 10.
EFFECT: invention allows to expand the range of gluten-free products with preservation of high nutritive and energy value, as well as organoleptic indices.
