SUBSTANCE: disclosed is a method of producing a sweetener, comprising the steps of producing stevia sweetener powder, grinding it to particle size less than 260 mcm, treating stevia at low pressure and high temperature, cooling the treated stevia sweetener powder to a temperature of about 25 °C and holding at a low temperature to obtain a readily soluble stevia sweetener powder with high solubility of at least about 1 g per 100 g of water at ambient temperature, feeding the obtained powder into a rolling device to produce a compacted material, introducing the compacted material into the size reduction device to produce a granular mixture, fractionating the granulated mixture to obtain a granulated stevia sweetener having a particle size in the range of about 150 mcm to about 260 mcm and a dissolution rate which is about 250% to about 280% higher than the dissolution rate of the readily soluble stevia powder.
EFFECT: obtained sweetener has a high level of solubility.
