FIELD: food industry.
SUBSTANCE: invention relates to food industry, namely to bakery industry, in particular to production of waffle crisps, which can be used as a product for healthy and preventive nutrition and an additional source of food fibres and vitamins. Functional waffle crisps contain whole grain wheat flour, oat flour, sugar, table salt, sunflower oil, powder of red currant refuses, preliminary dried to moisture content of 7–10% and milled to particle size of not more than 0.3 mm, oil flax seeds and water. Initial components are used at the following ratio, wt.%: whole grain wheat flour – 19.0, oat flour – 16.5, sugar – 1.6, table salt – 0.4, sunflower oil – 2.5, red currant refuses powder – 0.7, oil flax seeds – 5.0, water – balance.
EFFECT: invention enables to obtain a ready product enriched with food fibres and vitamins, with low content of sugar and salt.
