FIELD: food industry.
SUBSTANCE: invention relates to production of specialized food products for various population groups in order to eliminate or prevent deficiency of animal protein, food fibers, B vitamins and mineral elements in the diet. One proposes a meat pate with a vegetable filler, which includes chicken meat, olive oil, bulb onions, salt, ground black pepper, broth and malt sprouts of wheat or barley with the following ratio of components, wt.%: chicken meat—66–70; olive oil—3–7; bulb onions—5.2–7.2; ground black pepper—0.5; salt—1.5; malt sprouts of wheat or barley—11–15; broth—1.8–2.8.
EFFECT: invention provides improved dietary properties, expanded range and reduced cost of finished products, due to the integrated use of malt sprouts of wheat and barley in the technology of making meat pates, 100% wasteless use of wheat and barley grains is achieved, enhancement of biological value, functional and dietary properties of meat pates.
