FIELD: food industry.

SUBSTANCE: method of producing inulin from topinambur tubers involves milling the raw material to produce pulp, filtering and clarifying the extract, concentrating and drying. Before extraction, the pulp is blanched at temperature of 70±2 °C for 15 minutes, then extraction mixture is formed by mixing pulp with water in ratio of pulp : water of 1:4-1:8. Obtained mixture is extracted for 20-60 minutes using ultrasonic action with frequency of 22 kHz and intensity of 50 W/cm2 with mechanical mixing at rate of 15-30 rpm and its circulation mixing with circulation ratio of 20-30 volumes/h at temperature mixtures 60-80 °C. Extract is filtered mechanically through a filtering partition with a pore size of 20-25 mcm. Extract is clarified by mixing with activated carbon at a ratio of carbon to extract of 0.01:1. Clarified extract is filtered through a filtering partition with pore size of 20-25 mcm. Further, the clarified extract is ultrafiltered by passing through semipermeable membranes with a retention threshold of 5,000 Da. Concentration is then carried out by vacuum evaporation of the extract at temperature of 55-60 °C and residual pressure ≤ 4 kPa to dry substances content of 5-10%. After that, the extract is spray-dried at convective-radiation energy supply, air temperature of 120-150 °C and radiation heat flux density 3.6 kW/m2.

EFFECT: invention provides intensification of the process by improving extraction and drying operations when producing inulin from topinambur tubers.
