FIELD: dairy industry.
SUBSTANCE: invention relates to dairy industry, in particular, to butter production. Oil paste based on fatty substance of animal origin, containing blackcurrant jam, and additionally contains chlorella powder, whey protein isolate, and as a fatty substance of animal origin it contains an oil base with the following ratio of components, wt.%: oil base – 77; chlorella powder – 1.4; low-calorie jam "Zero gram" Blackcurrant – 10.8; whey protein isolate – 10.8, wherein the butter base is obtained from cream with a fat weight fraction of 38%, which is pasteurized at temperature of 85 °C with holding for 15-20 seconds, cooled to maturation temperature – 4 °C and sent for maturation for 5 hours to convert part of liquid fat into a solid state, then matured cream is beaten at temperature of 10-12 °C, after formation of butter grains, buttermilk is separated at temperature of 12-16 °C.
EFFECT: invention enables to obtain an oil paste composition with a balanced protein and vitamin composition, as well as with increased biological value, expands the range of oil pastes.
