FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to confectionary industry, and may be used for preparation of glazed waffle sweets with dark cookie grits sprinkling based on moulded waffles with filling. Proposed waffle candy is a body containing a waffle shell coated on the outside with milk chocolate glaze with dark cookie grits sprinkling, made in the form of a hollow volumetric geometric figure, the latter consists of two interconnected workpieces with a flat base and a creamy mass filling placed in the shell. Recipe composition of the waffle shell contains wheat flour, maize starch, lecithin, coconut oil, baking soda, food salt, egg powder, “Alfamalt LQ 4020” enzyme and water. Filling is made of a creamy mass containing a semi-finished product of confectionary mass, waffle sheets, “Cheesecake” flavouring agent, “Nova Sol Cof” antioxidant. Semi-finished product of the confectionary mass contains dry milk whey, confectionary fat “Econat 3004”, maltodextrins, dry defatted milk, confectionary fat “Econat 3004-32”, dry cream, lecithin, antioxidant “Nova Sol Cof”, granulated sugar.
EFFECT: invention is aimed at expansion of the range of products, as well as improvement of organoleptic properties in terms of taste and reduction of sugar capacity of the candy with storage life of 12 months.
