FIELD: food industry.
SUBSTANCE: group of inventions relates to food industry, in particular to production of instant powdered coffee. Disclosed is a method of producing a coffee suspension containing gas hydrates, comprising: providing a first coffee solution; cooling the first coffee solution; and applying pressure to the first coffee solution using a gas to produce a coffee suspension containing gas hydrates, wherein the gas contains carbon dioxide and/or nitrogen, wherein the coffee suspension has a ratio of gas in the hydrate fraction to gas in the liquid fraction (H:L) from 1:1 to 5:1. Also described is a coffee suspension containing gas hydrates, a method of producing instant powdered coffee using said suspension and instant coffee powder obtained by said method, wherein the powder has a closed porosity of 15% to 50%, a foaming porosity of 25% to 34%, and wherein the powder has a bimodal pore distribution.
EFFECT: group of inventions enables to obtain beverages with improved foaming ability using smaller portions of gas and shorter gas dosing time.
