FIELD: coffee industry.

SUBSTANCE: disclosed is a method of producing powdered freeze-dried coffee, involving: (a) obtaining a coffee extract containing from 40 wt.% up to 55 wt.% solid substances, (b) high-shear mixing of the coffee extract in one pass or in two or more passes in a rotor-stator aerator with added gas to form a foamed coffee extract, wherein gas is added in amount of 1 l (n. c.)/kg to 5 l (n. c.)/kg of coffee extract, wherein the rotor-stator aerator is maintained at a pressure of less than 2 bar and is adjusted with the possibility of applying a shear rate to the coffee extract from 7,500 to 20,000 s-1 for each pass with a residence time of 1 second to 2 minutes, (c) cooling foamed coffee extract to temperature below -40 °C without shear or with low shear rate with formation of frozen coffee extract, (d) grinding frozen coffee extract into powder and (e) drying the powder, wherein step (c) of cooling foamed coffee extract to temperature below 40 °C includes: (i) cooling the foamed coffee extract to a first temperature; (ii) cooling the foamed coffee extract from a first temperature to a second temperature that is lower than the first temperature and (iii) cooling the foamed coffee extract from a second temperature to a temperature below -40 °C, wherein the first temperature per 1 °C above freezing point of foamed coffee extract, and the second temperature by 3 °C is below freezing point, wherein step (ii) has duration of 30 minutes to 4 hours, preferably from 1 to 4 hours, and wherein the foamed coffee extract obtained at step (b) is maintained at a pressure of less than 2 bar until a frozen coffee extract is obtained at step (c).

EFFECT: invention enables to obtain a coffee product with more stable foam.
