SUBSTANCE: invention relates to food industry and catering industry. Proposed is a meat pudding containing milled meat raw material, milk, eggs, butter, spices in the form of salt and ground black pepper, which additionally contains bracken pre-soaked in water and milled, and boiled horse meat is used as meat raw material, at the following ratio of initial components, kg: boiled horse meat – 35, bracken – 20, milk – 30, eggs – 10, butter – 5, spices: salt – 1.2, ground black pepper – 0.5.
EFFECT: invention ensures enhancement of nutritive and biological value of the product, as well as expansion of the range of meat products and products of mass production.
