FIELD: biotechnology.

SUBSTANCE: disclosed is a method of producing biomass of mycelial cultures from the microbiome of truffle fungi, comprising growing "in vitro" in sterile conditions on a culture medium of biomass of mycelial cultures, at that, cultures are pre-selected at successive passages-passages according to their ability to fast growth and formation of fatty acid mycelium cultures of more than 10% of weight of dry biomass of mycelium and of unsaturated fatty acids of more than 30% of total amount of fatty acids. Biomass is grown at 22-28 °C in conditions of oxygen content from 2 to 10% and humidity 60-80% for 14-30 days. Culture medium used is a mixture of organic compounds containing proteins.

EFFECT: invention widens the range of methods for producing mycelium biomass recovered from the microbiome of truffle mushrooms with high content of unsaturated fatty acids.
