FIELD: food industry.
SUBSTANCE: whole anchovies are minced. The manufactured minced mass is delivered for maturation during 20-30 minutes. Before mixing, potatoes flakes or powder is dissolved with boiling water till puree condition and cooled to the minced mass temperature. At the first stage of mixing, the minced mass is introduced into potato puree; at the second stage - maize starch and salt are added into the produced mixture. After moulding the semi-product is slightly dried, then - fried and cooled. The ready product is packed. All the components are used at the specified components ratio.
EFFECT: anchovy chips production.
