FIELD: food industry.
SUBSTANCE: disclosed is a method for detecting sugar colour in alcoholic beverages maintained in contact with oak wood, according to which a beverage is sampled, UV spectra are recorded at wavelength of 280 nm in 10 mm quartz cuvette and optical density before treatment Db.t. is measured. Further, egg white beaten to a homogeneous mass is added to the alcohol beverage sample at rate of 20 g/dm3 of the analysed beverage, held for 5-10 minutes, the beverage is filtered through a paper filter, the filtrate is collected, UV spectra of the filtrate are recorded at wavelength of 280 nm in 10 mm quartz cuvette using 40 vol. % water-alcohol solution of ethanol as a reference solution and optical density after treatment Da.t. is measured. Presence of the colour in the sample is established when the condition is met.
EFFECT: invention provides higher objectivity and reliability of determining the presence of sugar colour in alcoholic beverages maintained in contact with oak wood.
