FIELD: alcoholic beverage production.

SUBSTANCE: invention relates to alcoholic beverages production and can be used for preparation of hard alcoholic beverages. Method of producing a taste-and-flavour base for preparing strong alcoholic beverages consists in charring of wood raw material with subsequent soaking in hot water with temperature of 70-80 °C, drying, mixing wood raw material with water-alcohol liquid, obtaining an extract, characterized by that the wood raw material used is oak and/or apple tree and/or pear tree, crushed to chips with geometric dimensions of 10×15×3 mm, water-alcohol liquid used is a mixture of wine distillate with softened water with a volume fraction of ethanol of 70 vol.%, mixing is carried out at a ratio of wood raw material and water-alcohol liquid of 1:10-1:15, extract is obtained continuously in a rocking autoclave with electric heating for heterogeneous processes at a mixture temperature of 105±5 °C for four hours, the obtained extract is cooled to temperature of 0±2 °C, held for 2 days, filtered and held at room temperature for 7 days.

EFFECT: invention enables to obtain a base for use in production of beverages such as brandy, whiskey and cognac.
