FIELD: food industry.
SUBSTANCE: proposed is a method for production of meat and vegetable preserves, including stages of recipe components preparation, milling, thermal treatment, meat raw material in the form of beef and pork meat is minced twice and subjected to thermal treatment for 8 minutes using melted pork fat, vegetable raw materials in the form of bulb onions and carrots are milled and sauteed in vegetable oil, and dry laminaria is soaked in water for 30 minutes and milled, after which meat raw materials are loaded into the mincemeat, then vegetable raw materials, holy thistle extraction cake, chlorella in form of powder, salt, ground black pepper and water are added, the mixture is stirred for 7–9 minutes until a homogeneous mass is obtained, which is sent for packing and thermal treatment, with the following ratio of initial components, wt.%: beef 40.0–45.0; meat pork 15.0–20.0; laminaria 15.0–20.0; melted pork fat 3.0–4.0; vegetable oil 3.5–4.0; bulb onions 3.5–4.0; carrots 3.0–3.5; chlorella 1.5–2.0; salt 1.5–1.8; holy thistle extraction cake 0.5–1.0; ground black pepper 0.1–0.5; water is the balance.
EFFECT: invention ensures production of meat-and-vegetable preserves for nutrition of people under conditions of radioactive and chemical contamination, as well as servicemen serving under conditions of radiation or dealing with poisonous chemical substances and heavy metals.
