FIELD: biotechnology; food industry.
SUBSTANCE: present group of inventions relates to biotechnology and can be used in food industry. Invention discloses methods for producing glycoside sweeteners, particularly rebaudioside D (Reb D) and rebaudioside M (Reb M) by active bioconversion of more available rebaudioside A (Reb A) in the presence of enzymes of the group of uridine diphosphate(UDP)-glycosyltransferases, characterized by novel amino acid sequences SEQ ID NO: 3 and 4, respectively.
EFFECT: invention may be applicable for production of alternative sweeteners possessing more attractive taste characteristics in comparison with conventional sweeteners, both synthetic and those extracted from natural raw material.
