SUBSTANCE: disclosed is a method for producing rebaudioside J using an enzymatic method, including using rebaudioside A as a substrate and using a substrate in the presence of a rhamnosyl donor in a reaction under catalytic conditions containing UDP-glycosyltransferase with recombinant cells and/or UDP-glycosyltransferase obtained therefrom.
EFFECT: invention enables to obtain high purity rebaudioside J with lower costs and a shorter production cycle.
