FIELD: food industry.

SUBSTANCE: method for high-temperature heat treatment and subsequent cooling of food products packed in a rigid or soft package in an autoclave involves filling the working volume of the autoclave with a heat carrier and the treated food product packed in a rigid or soft package. Prior to thermal treatment, autoclave cover is tightly closed to allow heat exchanger to be fitted therein. High-temperature heat treatment is performed. After high-temperature heat treatment of the product, autoclave heating is stopped. Then, without opening the cover with the heat exchanger installed in it, controlled supply of heat carrier is started to the heat exchanger from the external pipeline by cooling the working volume of the autoclave with the processed food product placed in it and packed into a rigid or soft package. Supply of heat carrier to heat exchanger is controlled so that cooling of working volume of autoclave takes place at least in 30-40 minutes. After cooling of the working volume of the autoclave, supply of heat carrier to the heat exchanger is stopped. Treated product is unloaded and cooled to room temperature outside the working volume of the autoclave.

EFFECT: invention is aimed at simplifying and increasing safety of the method for cooling preserves and food products after heat treatment in solid and soft packages sensitive to pressure drop.
