SUBSTANCE: invention relates to food and processing industry. Disclosed is a method for bone raw material degreasing, involving bone raw material intake, its crushing, water degreasing. First, bone material is treated with water for 20 minutes at temperature of 90-95 °C, then with an aqueous solution containing lipase 1 vol.%, calcium chloride 0.5 vol.%, water – the rest, 98.5 vol.%, at pH ≈ 7.2 and temperature 45-50 °C for 4-5 hours.
EFFECT: invention increases bone fat yield.
