FIELD: food and pharmaceutical industries. SUBSTANCE: this process includes such steps as pouring water over dry leaves and shoots of Stevia rebaudiana, carrying out extraction at temperature of 50 to 100 C admixing thus prepared aqueous extract with alcohol having 4 to 8 carbon atoms, separating alcoholic extract from thus prepared admixture, evaporating extract to remove alcohol, dissolving resultant residue in water, drawing off end product by repeatedly admixing resulting aqueous solution with alcohol esters having 1 to 5 carbon atoms and acids having 1 to 4 carbon atoms and separating aqueous phase from ester one after each admixing step. Process must be conducted until colorless ester phase is obtained and remaining aqueous phase must be subjected to concentration. EFFECT: higher yield of end product and greater simplicity. 2 tbl
