FIELD: food industry.
SUBSTANCE: method for producing a composition of non-steviolic glycosides is proposed, including stages of preparation of plant material of Stevia rebaudiana, preparation of an extracting solvent, mixing of plant material of Stevia rebaudiana and the extracting solvent for obtaining a mixture of stevia plant material and the solvent, separation of the mixture of stevia plant material and the solvent in order to obtain filtrate containing steviolic glycoside molecules and non-steviolic glycoside molecules. In this case, the separation includes filtration through diatomaceous earth. Then, steviolic glycoside molecules are isolated or separated from the filtrate in order to obtain a composition of non-steviolic glycosides.
EFFECT: obtained compositions can be used as flavors, sweeteners, antioxidants and other functional ingredients.
