FIELD: food industry. SUBSTANCE: coffee beans were roasted, ground and extracted for two stages. Before the second stage onset enzyme preparation Xyloglucanofoetidin P10x-405 is added to coffee (concentration is 0.3-0.5% of the raw mass), and water at the ratio (1:2)-(1:4). Mixture is kept at 40-60 C for 2-5 hr, extracted at 165-175 C for 2.5-3.5 hr, prepared extract is mixed with aromatic fraction obtained after the first extraction at the ratio (40:60)-(50:50). EFFECT: increased yield, enhanced quality of the soluble coffee.
