FIELD: biotechnology. SUBSTANCE: method involves treating the solution of complex pectolytic ferment preparation in cathode space of diaphragm electrolyzer at a current density of 0,05-30,00 mА/cm2 to pH 10.5-11.5, holding out, separation of sediment, bringing pH to 4.5-5.5 and extracting the target product. Solution of complex pectolytic ferment preparation is treated with aqueous solution of sodium salt of inorganic acid in a concentration of 0.3-2.0% . In above-mentioned pH interval the pectinesterase is stable and its yield is 56-67%. EFFECT: method ensures removal of alkali-labial proteins including polygalacturonasa with maximum preservation of pectinesterase in solution. 3 tbl
