FIELD: food processing industry.
SUBSTANCE: claimed method includes cedar nut grinding to produce uniformly colored mass and extraction with water in nut/water ratio of 1:(3-10) with pectin addition under stirring. Extract is filtered. Filtrate in purified by settling at approximately 5°C for 3-12 h or by centrifugation. Product is homogenized and treated under low temperature conditions (not more than 30°C) for 20 min.
EFFECT: product of increased nutrient and biological value and improved taste; increased yield of target product.
