FIELD: food industry. SUBSTANCE: ozone-air mixture are proposed for clarifying glucose-molasses syrup. Said clarifying is carried out at 50-75 C, expense of proposed mixture being 2-15 m3/m3·h of glucose syrup. Concentration of ozone is gradually decreased to its minimal available value during said clarifying. EFFECT: improves quality of final products, simplifies technology, increases yield of glucose, decreases glucose losses.
