FIELD: fish industry. SUBSTANCE: pelagic fish having iodine number 160-220 g J2/100 of fat is used as raw materials. Raw materials are ground and tissues are destructed by food acid at 15-40 C, ratio of said acid and fish being 0.5-1.0:100. Thus prepared suspension is centrifuged and fat fraction is separated, refined and cooled to 0-15 C. Thus prepared fraction is allowed to stand within 5-20 h to complete crystallization of saturated fat fraction. Unsaturated fat fraction is separated by filtration under vacuum and is stabilized with the help of tocopherol, its quantity being 0.5-1.0 EFFECT: improves quality of desired fat. 1 tbl
