FIELD: food industry.
SUBSTANCE: method of producing fish oil from West Pacific sardine, involving grinding fish raw material, treating the obtained mince with an edible acid, separating into fractions by centrifugation and subsequent treatment with cooling and filtering, is characterized by that willow sardine is cut and milled, drinking water is added to the obtained fish mince in a volume ratio of 1:3, thoroughly mixed and 30% aqueous solution of citric acid is added to achieve pH 5.5–5.7, mixed and heated to temperature of 48–50 °C for 25–30 minutes, centrifuged, separating the lipid, water-lipid and protein-mineral fractions, after which the lipid fraction is cooled, the water-lipid fraction is purified by filtration and dried at temperature of 52–55 °C, and the obtained lipids are combined.
EFFECT: invention makes it possible to increase output of fish oil from willow sardine, to ensure high content of polyunsaturated fatty acids of omega-3 family, to increase content of eicosapentaenoic and docosahexaenoic acids, to ensure high content of fat-soluble vitamins and to improve the ready product quality.
