FIELD: dairy industry. SUBSTANCE: method involves pasteurization of raw milk and supplementation with dihydroquercitin (0.005-2.0% of milk dry matter). Dihydroquercitin is added as aqueous solution or aqueous-alcohol solution 1:10. The mixture is supplemented with 0.005-2.0% of ascorbic acid added as 1-2% aqueous solution after concentration of the product. Sugar syrup may be added, and the product is homogenized, packed and sterilized. The content of dihydroquercitin is measured in a sample of milk concentrate after dilution with water, removal of lipid fraction, extraction of dihydroquercitin from the defatted sample with concurrent sedimentation of protein fraction, extraction of dihydroquercitin from the latter and chromatography of both extracts. The content of dihydroquercitin is compared to the applied amount. EFFECT: higher product quality. 2 cl
