SUBSTANCE: invention is intended for usage in poultry-processing industry. Method and device for collection of femoral meat and meat tender legs poultry containing femoral bone with a hip joint and knee joint, besides, hams poultry retained joint, then meat, available on the femoral bone below the specified joint is stripped off the femoral bone from said joint, the meat is then separated from the femoral bone and is collected for further processing, the poultry hams is suspended for hip joint, and tender meat is separated from the hip joint to scraping meat from the femoral bone from the hip joint.
EFFECT: method and device for collection of femoral meat and meat tender legs of poultry.
