FIELD: meat industry. SUBSTANCE: raw meat in sealed packaging is exposed to high pressure. The cyclic exposure involves two stages in every cycle. At the first stage in the high pressure apparatus the value of pressure gradually increases to attain 500 MPa, and meat is exposed to this pressure for 1-1.5 min. At the second stage pressure drops to 200 MPa, and meat is exposed to this pressure for 1-1.5 min. The whole cycle is 9-12 min. EFFECT: higher product nutritive value; lower energy consumption. 2 tbl
