FIELD: methods for producing protein preparations from collagen-containing by-products of 2nd grade at food and meat enterprises. SUBSTANCE: method involves treatment by inorganic compounds stage-by-stage. First, treatment is carried out for 7-24 h by alkali-salt solution containing 10-100 g/cu.dm of sodium hydroxide and 10-200 g/cu.dm of sodium chloride. Then, raw material is neutralized with 1-10-% solution of hydrochloric acid up to 5.5-6.0 pH. After each stage, washing is carried out by solution of sodium chloride at concentration 10-200 g/cu.dm, and all stages are conducted at room temperature. EFFECT: higher efficiency. 1 tbl
