FIELD: dairy industry. SUBSTANCE: method involves preparing lactose an aqueous alkaline solution, its isomerization at 70-100 C, condensing the isomerized solution, lactose crystallization and separation of lactose crystals from lactulose syrup. Catholyte obtained by water electrolysis, pH value = 10.5-11.5, is used for lactose an aqueous alkaline solution preparing. Lactose concentration of the parent solution is 1.0-5.0%. Method can be used for preparing products showing bifidogenic property. EFFECT: improved method of syrup making.
