FIELD: food industry. SUBSTANCE: at first wafer sheets were prepared by component mixing. Wafer sheets were put on the griddle surface and baking mixture prepared. Simultaneously, filler is prepared which contains grit mixture of the same wafers mixed with corn flour at the ratio 1:3. Grit for this cake is roasted preliminary at 160-170 C up to golden-cream color and milled up to the particle size 60-80 mcm. Wafer sheets were smeared with prepared filler. Prepared semifinished products were cut for the separate articles. Then articles were glazed with chocolate glaze which is preliminary mixed with cacao-butter. Prepared stocks were fed to the cooling. Components used for cake preparing were taken at the definite ratio. EFFECT: improved quality, enhanced chocolate aroma.
