FIELD: sugar industry. SUBSTANCE: method involves beet washing, milling, scalding the obtained mass, extraction with water in extractor, removing diffusion juice and pulp and addition of bactericide substance. The latter is anolyte exhibiting pH = 5.0-7.0 and reductive-oxidizing potential = (+500)-(+800) mV (relative to chloro-silver comparative electrode). Anolyte is prepared from sodium chloride solution at concentration 1.0-3.0 g/l by treatment in electrolyzer anode chamber using insoluble electrodes and ceramic diaphragm. Anolyte can be added at washing raw stage and/or in extractor, at milling stage and/or in extractor, or at scalding raw stage, or with water in extractor.
