FIELD: food industry; analysis of food. SUBSTANCE: sample is irradiated with point light source, and intensity of light dissipated at back directions is measured. Contents of components are determined from the intensity. Intensity of dissipated light is measured, incident onto boundary of milk at total internal reflection angles. Device has light sources and receiver, which are disposed onto the plane and separated from the sample tested by thin layer of transparent dielectric. One of light sources is mounted in such a manner, that radiation from this source falls onto boundary of milk at total internal reflection angles.
