FIELD: food industry, particularly confectionery. SUBSTANCE: in filling cooker crushed raw in amount of 65-70% from total mass of filling is mixed with granulated sugar, and this mixture is boiled up to humidity of 17-22%. At the same time, fat-containing component is crushed up to 1-3 mm size of particles, and introduced into temperer with taste and aroma additives. Anticrystallizing agent is added to filling on stage of mixing of formula components or on stage of tempering at reduced temperature up to 65-70 C. Baking of crisp sheets is conducted simultaneously. Then crisp sheets are coated with filling layer-by-layer, and after cooling they are cut into separate products. EFFECT: higher biological value; increased wafers storage life.
