FIELD: milk industry. SUBSTANCE: milk is treated with stabilizer which may be catholyte obtained from tap water with pH 11.2-11.5 and redox potential 885-890 mV, or return product, or milk, the two latter having been treated in cathode zone of diaphragm electrolyzer to pH 9.0 and redox potential 715 mV, or to pH 9.5 and 700 mV, respectively. Catholyte is entered in amount 0.2-5.0% based on milk weight, whereas amounts of return product and milk are 1-50% each. EFFECT: increased stability of milk. 3 cl, 2 tbl
